I have an Epson Stylus CX5800F all-in-one. Since I don't want to use color ink cartridges, is it ok to have 3 empty cartridge holders and have the black cartridge in there alone?

I have an Epson Stylus CX5800F all-in-one. Since I don't want to use color ink cartridges, is it ok to have 3 empty cartridge holders and have the black cartridge in there alone?
The thing about Epson is that you can't print if there's a missing cartridge (even just a single one), and if one or more cartridge is empty. Just try using the ink once in a while as it wouldn't really hurt. Refilling comes cheap anyway.
